OCHOTA BARRELS BOTANICALS OF THE BASKET RANGE VERMOUTH INSPIRED RED 2016

Throughout the 2016 vintage (early February to late March) a continuous ferment was kept alive in egg 69 by adding a portion of whole bunches from each picking. Taras and his son Sage then went outside the cellar to collect the 17 botanicals which grow within a 44 metre radius, including sage, wormwood, rosemary, thyme, wild fennel, elderflower, lemon balm, bay leaf, river mint to make a bouquet garni. After infusion they were basket pressed to 2 seasoned French barriques and bottled unfined, unfiltered, unfortified and unsweetened, with minimal So2. Light, pretty, with lashings of pan juices.
